Coffee Rubbed Burger with Finlandia Gouda Cheese and Caramelized Onions

Ingredients
2 tablespoons vegetable oil, divided
3 yellow onions, sliced thin
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon finely ground coffee
2 teaspoons brown sugar
1/2 teaspoon coriander
1 1/2 pounds ground beef
8 slices Finlandia® Gouda Cheese
1/4 cup barbecue sauce
4 pretzel hamburger buns, split and lightly toasted
1/2 head bibb or butter lettuce, leaves separated
8 slices thick-cut bacon, cooked
Directions

1. Heat 1 tablespoon oil in large skillet over medium heat. Add onions, and cook, stirring occasionally, until softened, and golden brown, about 10 to 15 minutes. Season with salt and pepper to taste; set aside.

 

2. Combine 2 teaspoons salt, 2 teaspoons pepper, coffee, sugar, and coriander in small bowl. Form ground beef into 4 equal patties, and season all sides with coffee mixture. Heat remaining oil in large skillet over high heat. Cook patties for 5 minutes, flip and cook additional 4 to 6 minutes, until cooked to desired doneness. With about 1 minute remaining on cook time, add 2 slices of Finlandia® Gouda cheese to each patty.

 

3. Spread barbeque sauce on both sides of buns. Top each bottom bun with layer of lettuce and burger patty. Top with caramelized onions, bacon and top bun and serve.
